Lemon Shortbread Cookies: Gluten and Sugar free, Vegan

When my lemon tree produced a lemon, I knew it was time to create a lemon cookie recipe! These cookies are organic, vegan (if desired), and free of sugar, gluten, etc.

  • 2 cups almond flour
  • 1/2 tbsp coconut flour
  • 1/4 tsp salt (see my low lead salt guide).
  • 2 tsp monkfruit extract: https://amzn.to/47p0xCb
  • Zest from Β½- 1 lemon (depends how strong of a lemon flavor you like)
  • 2 tbsp lemon juice
  • 1/2 cup unsweetened applesauce
  • 1/2 cup coconut oil, melted
  • 1 tsp vanilla extract (you could substitute part of this with lemon extract for a really strong lemon flavor)

Mix dry ingredients, then add wet ingredients and combine.

Roll into balls and press gently to flatten into circles. Or, get creative with shapes!

Bake at 350 degrees on greased stainless steel pan for about 25 minutes, until the edges begin to brown slightly. Let cool completely.
