Cakes can be cute AND healthy π This is my latest example showing that itβs possible! My son requested this theme and helped bake and decorate it.
The cake itself (without the frosting) has NO added sugar or artificial sweeteners, and is gluten, dairy, soy free, and could be easily made vegan. If you need a nut free vegan cake, my buckwheat recipe can be made as a cake.

Ingredients:
Get as many ingredients as possible as organic.
- 3 cups blanched almond flour (240g) sifted, spooned into measuring cups & leveled
- Β½ cup arrowroot starch/flour (or substitute some of this with cacao powder) (58g) (I use Navitas; the lowest lead option I have found: https://amzn.to/3N0WOCG Amazon associates links)
- 2 Tbsp coconut flour (15g)
- Β½ cup applesauce
- 2 tsp aluminum free baking powder
- Β½ tsp baking soda
- Β½ tsp salt (see my low lead salt guide).

- 2 large eggs (you could also try chia or flax eggs)
- 1 cup almond milk or water
- β cup coconut oil (melted) or avocado oil
- Β½ Tbsp vanilla extract or other extracts
Combine all dry ingredients (almond flour, arrowroot starch, coconut flour, baking powder, baking soda, monkfruit and salt). Sifting the almond flour is recommend to remove lumps.
In a large mixing bowl, whisk together all of the wet ingredients: eggs, oil, applesauce almond milk and vanilla. This is the lead-free glass bowl I use: https://amzn.to/3SqJ6Mh (Amazon associates link).
Next, add the dry mixture into the wet mixture and whisk until combined.
Pour the batter into two 8 inch rounds or three 6 inch round stainless steel cake pans. Teamfar brand pans has been tested lead free. https://amzn.to/48YE4w7 (Amazon Associates link).
Bake at 350 degrees F for 30-40 minutes or until a toothpick comes out clean.
Cool the cakes in their pans for 5-10 minutes, before removing and allowing to cool completely before frosting. Or you can put them in the refrigerator or freezer.
Frosting and Decorating:
I do have a very healthy frosting recipe I created below, but for the cake in the picture I used Miss Jones brand: Amazon associates link: https://amzn.to/48WDgIJ. The key to using ready made frosting like this is to whip it with an electric mixer and add a tiny bit of oil if it still seems too think or very clumpy. This frosting does contain sugar but at least itβs organic and doesnβt contain lots of artificial other ingredients.

To make the number 4, I laid a sheet of parchment paper over the cake and used a marker pen to draw a number 4 on it that would fit within the top of the cake. Then I cut out the number and put it back on top of the cake.
First I smoothed the frosting around the sides with a frosting spatula, then I piped the frosting on top using a piping bag, around the parchment. I bought a piping tip that was supposed to look like grass, but it didnβt work. So I used a small star tip and just piped across in lines. Then I peeled the parchment off and threw it away.
Last, I piped the white lines for the road, directly onto the cake.
