No Sugar Paleo Cranberry Sauce using Monkfruit

Introduction:

Some people love canned cranberry sauce, but I just never have. Also, canned goods have a toxic lining (even the ones that claim to be BPA free).

Homemade cranberry sauce changed my mind! I actually like cranberry sauce now and feel good about serving it to my family (also people are I usually impressed, even though it’s easy to make)!

There are many, many different recipes on the internet, and they greatly vary in ingredients. I created this one and continue to tinker with it. It is a great balance of tartness with some sweet orange and a tiny bit of spice for flavor (or you can omit those if you prefer).

The best thing about this recipe is that you can adjust the amounts of everything to your liking as far as taste and consistency!

Recipe:

• 12 oz. fresh organic cranberries

• 3/4 cup water

• The juice fresh squeezed from one medium organic orange (about 6 tablespoons)

• Zest from ½ the orange (or more if you like)

• ⅛ tsp. ground cinnamon

• ⅛ tsp. ground cloves

• ⅛ tsp. ground nutmeg

• ¼ tsp. Pure monkfruit powder. You can add more to your liking, but be sure to add a little at a time because it is possible to add too much. Here is an Amazon associates link to the one I use: https://amzn.to/47p0xCb

• ¼ tsp. Salt (this actually helps bring out the sweetness) (see my low lead salt guide).

Combine everything over medium heat in a glass cooking pot until it comes to a boil and the cranberries start popping. Be aware that wooden spoons may get stained from stirring this mixture. Reduce heat to a simmer, stir occasionally and cook about 15 minutes or until your desired texture. As you cook it, it will naturally get a gelled, thick consistency.

If it is still too tart for you, you can add a sweetener of your choice (honey, maple syrup, etc) at any time. Add one tablespoon at a time; it’s possible to add too much and alter the flavor greatly, so go slow. After cooking, you can also choose to add 1/4 tsp. or more of Organic Vanilla Extract.

A tip for leftover cranberry sauce is that it can be used similar to a jelly or jam alongside various breakfast foods.
