I used to make these years ago and for some reason stopped, probably got out of the habit because I’ve moved houses so many times. I recently resumed making them and still love them!

Ingredients (makes about 1 baking or dehydrator sheet):
1 cup organic chia seeds (Amazon Associates link https://amzn.to/3Iihwio
½ cup water (add a little more if it looks too dry)
2 tbsp melted organic coconut oil (Amazon Associates link https://amzn.to/4mGWnMB)
½ – 1 tsp salt (or to taste) (check my low lead salt guide)
Optional add-ins: sesame seeds, sunflower seeds, garlic powder, onion powder, herbs, nutritional yeast, etc.
Directions:
Mix chia seeds, water, coconut oil, and salt in a bowl. Let sit 10-15 minutes until the mixture gels and thickens.
Spread the mixture thinly and evenly (about ⅓ inch thick) onto a parchment-lined or well-oiled baking sheet
Score into cracker shapes with a knife or pizza cutter.
Place in a dehydrator, or bake in an oven at 325°F (160°C) for 30-40 minutes, flipping halfway if possible until dry and crisp. Store in an airtight container.
Be sure to drink plenty of water when you eat these.
